Another thing I think gets misunderstood is when Padmé says, "It makes me feel uncomfortable", she isn't saying it because she doesn't like Anakin yet, she just 1) wants to keep things professional, and 2) she obviously didn't like that blunt approach he was taking. So Anakin took what she said to heart and resolved to find a better approach that would feel more safe and subtle, more playful and vulnerable. And I think that effort he showed went a long way in showing her how much he cared about her and her wishes. And you can see by her wardrobe on Naboo she is starting to feel more safe and comfortable around Anakin. I think the whole scene is misunderstood. Anakin tries (unsuccessfully at that point) to show Padme that he is grown up (as one YouTube reactor said, you are not so grown up, you are just taller). He is in a way towering over her and looking at her with a certain defiance and challenge, that shouldn't be comfortable to anyone. Padme decides (rightfully) that the things should go at their places and directly says how she feels which is very unusual for her: she does not express her feelings directly except in the tunnel of Geonosis arena. Then Anakin really meant it when he said sorry: as you said, he changed his behavior towards her. Some people says his look in the end of this scene is uncomfortable but I think the context shows that Anakin is triumphant that she already noticed that he isn't a boy anymore which was very important for him. He is ok to step back and be more tamed but he is triumphant that she noticed him. Yes, is very childish, but it shows that Anakin is not yet grown up: in the metaphorical sense of the word.

At first Padmé didn't have much faith in Anakin, when it came to winning the race to help them buy parts for their ship. But with Qui-Gon as a sort of informal mentor, he taught her to think more outside the box, and to take risks on people and things that warrant faith, when it comes to things like finding creative solutions to life's obstacles and difficult problems.
Eventually Padmé came around, and had forged a very strong faith in Anakin. Which is a good thing.
In fact, her faith in him was so strong, it never waned. Even after what he did at the Tusken camp. And through to her untimely end.
Her faith in him was noble, but like the Jedi's faith in the Clones, led to her downfall.
Yet, her faith was ultimately vindicated 25 years later, when Anakin finally returned to that selfless person he once was.
