I think Padme's death is more interesting than all of the other ways she could be killed off (medical illness or complication from childbirth, accident, fighting the Empire). Her death by loss of the will to live elevates the story beyond the mundane. The emotions in her and Anakin's love story are so big and exaggerated which makes it more appropriate to the style, tone, and genre of Star Wars than the other options. Although, death by fighting the Empire is certainly genre-appropriate, just less interesting. The fact that she feels so strongly deeply about Anakin that his defiling of his goodness can kill her elevates the story beyond our everyday reality. You know you're not in Kansas anymore at that point, that's for sure. But hey, too many people are stuck in their fixation on realism. I just don't find that approach terribly interesting.
