Hello there!
My favourite Star Wars YouTuber has recently started a series where he & his viewers watch along the making-of documentaries and features from the original prequels DVDs. I'm surprised to notice that there's footage here I've never seen before, or seem to have completely scrubbed from my memory (they weren't on the 2011 Blu-rays, were they?). So I've become quite enthused about watching all of this stuff, however many hours it takes. If you too would be interested, then perhaps we could even create a bit of dialogue below? If you have the original DVDs, including the bonus discs, then feel free to watch those instead if you wish, just make sure you know what we're covering.
So, we'll be starting from Episode II with this video (we'll come back to TPM, don't worry):
If you have any thoughts on these featurettes, please do share. If you'd like to address criticism of the films, please turn to the "debunking anti-PT" thread, this one will try to have a more positive vibe. Any comments on the humour in the docs will be warmly welcomed! Can't ignore Ewan McGregor in this one, haha.

I immediately devoured all of the special features on the main prequel and original trilogy Star Wars DVDs upon their release! These films and their DVD releases perfectly eclipsed my teenage years and the prodigious amount of bonus content served as a kind of film school before film school for me. You have to hand it to Lucas and his company to provide such an entertaining and accessible look at the creation of these beloved films which leaves most other filmmakers (aside from Peter Jackson, perhaps) appear somewhat stagnant in relation to their audience of impressionable youth and potential filmmakers.
Thanks for pointing out this series, Archduke. I may revisit some of these quality features and featurettes for nostalgia's sake from time to time via this series.

The first video started covering featurettes (digital cinema, Jedi Star fighter, Locations) from the very-appropriately named Web Documentaries off the AOTC bonus DVD . This one does the remaining ones, including Hayden's audition tape (the video title), Geonosis Arena, Jango Fett, Visual Effects, Extras, Jedi Knights in action, and Padmé's costumes.
Glad to be of help Somny ! I too can recall binging on all the behind the scenes stuff when I got the Blu-Rays. "I want more" is something that would often pop into my head, funnily enough. It feels like several years sense I last went through these, so this series is also coming at a great time for me, and having a blast with all the nostalgia.

There's a TPM featurette in the DVD that has a cut sequence from the lightsaber duel, you can't find it anywhere else. It shows the transition of the fight to the top catwalk: I always found it a pity that these deleted scenes with finished effects (probably deleted very late in the game) were never made available. Although I'm glad that Lucas took the time and money to finish the deleted scenes that were never finalized to begin with.

Next up in the series (still on AOTC) is the first of the documentaries, From Puppets to Pixels. It's a good 50 minutes long, so I hope you have your popcorn ready...
