I've only seen Krull, The Black Hole, The Last Starfighter, He-Man and Starchaser: The Legend of Orin, and I like all of them quite a bit. I feel they still have enough original elements to hold their own as their own IP.
I had Starchaser on VHS and watched it probably over 20 times. I mentioned it in Smitty's Lightsaber video thread.
The Last Starfighter though, actually, I saw that in theaters as a kid in 1984 and loved it. Then I watched again it in my 30s, and saw how cookie-cutter it was. It's still ok, but definitely an example of the safest way to make a textbook, screenwriting 101 movie. I mean, even ANH is a classic, textbook hero's journey, so in that way they were imitating Star Wars well, but maybe a little too well? Haha.
Krull, too, I seem to remember from my only viewing, being an interesting idea executed as generically as possible. I think I remember being a little disappointed with it.
He-Man was... not so great. But, it's at least kind of so bad it's good.

Yeah, it did. The thing is though, that doesn't automatically mean it's a bad thing. Everything is inspired by something. The creativity comes in how you use your influences with your own ideas.
The Beatles Led Zeppelin The Matrix You name it, are all pastiche patchworks of things that came before, with a flair of innovation that makes it all new again.
"Talent borrows, genius steals".
I mentioned in another thread how The Cars remind me of Star Wars. A distilled amalgamation of everything that came before with the perfect modern, cutting edge twist, plugged in to the current zeitgeist.

I would say SW was influenced by Dune. But is it a blatant rip-off? Nope. The SW setting takes little details from Dune to build its setting (a desert planet, spice as an economic resource, etc). There is also quite a bit of influence from Isaac Asimov's Foundation Series (an galaxy wide Empire). That being said there are big differences. In SW, spice plays a minor background role, whereas in Dune it is much more prominent and important to the story. SW also uses The Chosen One trope, but unlike Dune it plays that trope with all sincerity instead of deconstructing it like Dune does. As for Foundation, Asimov takes a much more secular approach to his narrative, whereas George's theism is obvious in things like The Force.
But yeah, I like Subtext's explanation that all of the classics he mentions are pastiche. That is the perfect word for it.

Also, I would imagine the whole desert planet of Tatooine was a matter of practicality, given the technology of the time.
And the people who love to cry "rip-off" fail to recognize things like Dune and Foundation also borrowed from previous inspirations.

I think McCartney has said himself that they were just Brits recycling old Americana pop to sell to young Americans.

One movie I feel doesn't get enough love is Flight Of The Navigator.
It capitalized on the '80s kids standards of spaceships and friendly aliens, but has a unique flair all it's own, and is an enjoyable movie. And casting Paul Reubens was perfect.
