The problem with your questionnaire is two-fold:
i) I could pick a whole bunch of YouTube channels that have at least mildly entertained me where Star Wars content/commentary goes.
ii) I can't think of a single Star Wars podcast I've ever really listened to in my entire life.

Favourite Star Wars podcast: Not joking with what I said earlier. I really don't have one. YouTube really fills my needs here. I would, however, be keen to learn if other people follow or listen to any.
Favourite Star Wars YouTube channel: Just one? Can't do it. I tend to randomly scoot onto different channels, rarely paying the channel itself much mind. I'm more into commentary and perspective. Chaining myself down to a particular channel, in this regard, at least where Star Wars goes, has never been my thing. Still, parody channels like
Auralnauts and
Janobot are amusing, and the Disney-roasting postcard channel
Jar Jar Abrams deserves an honourable mention. While not a Star Wars channel, I also like the positivity of
CinemaWins -- their Star Wars videos are really a welcome counter-balance to a lot of the negativity and snide dismantling that is practically the norm on YouTube where Star Wars is concerned. Still, I dig a certain level of negativity and roasting, because it helps calibrate my own opinions. If negativity exists, I want to know about it. It becomes a chore when it's unrelenting, but I don't disdain negativity like some people in the fanbase do. I embrace it as raw material to improve my own perception and understanding.
Favourite Star Wars Twitter account: What? People follow accounts on Twitter?
Seriously? Look, I don't even have a Twitter account, which means I can barely even read a jot of that putrid website anymore (it constantly forces you to sign in to read more than a yard of the screen), let alone have I contemplated
following anyone on there. No, thanks.
Other Star Wars websites of note: Oh, boy. Quite a few. No, wait. Nonsense. Again, I don't really look for Star Wars websites, per se. It's more about random insight and analysis for me. A few of the best pages/analyses no longer exist. One of the best overall resources that has helped keep me going is, yes, the dreaded
TFN message boards. That's because I have a lot of history there and because TFN itself has a lot of history. Ignore the mods, the users can offer all manner of perspectives on the films, if you persist and really know where to look. Another website worth paying
some attention to is Reddit. There can actually be a lot of fun and worthwhile morsels to chew on if you're willing to spend some time there.

Writing up this post, answering your categories, or at least pondering them, has sort of made me question how I "follow" Star Wars online, and how I gather and form insights in the process. I really don't know. I watch a lot of YouTube stuff and read many of the comments underneath various videos, I read the boards (sometimes) at TFN, I talk Star Wars with a couple of friends online, and I post here. I also Google any Star Wars item/topic I want more information about; and that's where I often encounter random pages of interest. Using switches on Google is also useful. That is, you type into the search box:
site:(website) then the search string. Then all search results are filtered/locked to just that website. Very neat and has saved me a heap of time. I guess I like being free like Jar Jar to roam the forest for my daily brisky morning munchen.
