It'll probably be re-done eventually, but not for a number of years. One of the things about the Original Trilogy is the success of so many strong interlocking elements (for example: the music of John Williams). This gives it a strong degree of artistic "locked in" protection. Of course, in our modern consumer world, little is precious or sacred. So don't expect that lock to hold forever. And then, of course, some would argue: What? Disney? Remaking the Original Trilogy again? Isn't one $837-million remake enough?

IMOHO. Disney will feel pressure to update the OT when the generation that identifies the ST as its own, now, is of age to have children that enter Disney's target market of 4-12. The present ST will remain canon, unaltered, un-updated, at least through the strong parenting years of the present ST 4-12 demographic.
